The easiest surf & turf nachos you HAVE to try before the summers over!

It’s been a while since I shared a recipe here and this one is easily one of my favorites ever. We’ve been making an extra effort to open up our home and prioritize community this summer, but sometimes that also means extra work and that can be enough to hold you back from extending an invitation! I get it! This summer I randomly threw this idea together… and now I can’t stop making it. 😉 The best part about this recipe is, it’s more of a general suggestion! No measurements, no exacts, just a couple ingredients and steps! I mean it when I say it’s the EASIST meal to whip up for guests! Plus it’s just different and fun!

Here’s what you’ll need:

(change up however you want! add… take away… make it yours!)

  • Baking sheet (a small pan makes more than enough for the two of us, but I always use a large when feeding more than one couple!)
  • Tortilla chips (we prefer Juanitas!)
  • Meat of your choice
    • We’ve used the Seafood Blend from Trader Joes which was yummy, but a little adventurous for me…
    • My favorite is a homemade blend of chicken and shrimp
  • Your choice of cheese (I like to use a shredded Mexican blend)
  • Black beans
  • Guacamole
  • Pico de gallo
  • Cilantro

How to make it:

  • Preheat the oven to 350 degrees
  • Spread out tortilla chips on your baking pan
  • Sprinkle cheese on the chips
  • Add a layer of beans
  • Spread your meat of choice on top
  • Sprinkle more cheese
  • Sprinkle your desired seasoning on top
  • Bake just until the cheese is melted
  • Pour guacamole and pico de gallo on top
  • Add cilantro before serving

I like to put the whole pan in the middle of the table with some extra toppings and serving utensils and just let people pick at it throughout the meal. It’s a casual, fun summer meal and the leftovers reheat surprisingly with a couple minutes in the oven!
