I love a meal that tastes like a memory! For me, this dish tastes like summertime. It was one of my mom’s side dish staples when I was growing up. We ate it all summer. Usually outside! Now it’s become one of my staples and I love that friends associate our home with this taste.
One of the reasons its a favorite is because it uses simple, fresh ingredients, and its SO easy! Try it the next time you have to bring an item to a BBQ this summer or test it out on your family this week. Even picky eaters like it and I always end up sharing the recipe with at least one person!

What you’ll need:
1 box of penne pasta
6 roma tomatoes
1 & 1/2 cups of fresh basil
6 cloves of garlic
3/4 teaspoon of salt
1/4 teaspoon of pepper
1/3 cup of olive oil
1 cup of shredded parmesan cheese
How to make it:
Dice tomatoes
Chop basil
Press or dice garlic
Mix 3 ingredients in a large bowl with olive oil and add salt and pepper.
Cover bowl with plastic wrap and let sit for one hour.
Cook noodles and let them cool before adding (dish is to be served warm/at room temp.)
Stir in noodles, toss pasta and sprinkle on cheese before serving.
I usually like to serve this as a side with grilled chicken or steak, a salad or asparagus for a veggie, and grilled potato slices. Perfect summer meal!
